Amazingly Delicious Kale Chips

Okay…When I first heard of kale chips, I was skeptical. They couldn’t possibly taste as good as potato chips. Boy, oh boy, was I wrong! These chips are so delicious!! Even my dad, who absolutely adores Lays potato chips said he wouldn’t mind if I just made these from now on..*win*! :]
Besides being absolutely scrumptious, there is the added bonus of the health benefits of kale. Kale is known as being one of the powerhouses of the food realm. Antioxidants and nutrients are imbedded in every tinie tiny inch of leafy goodness. Anyways, enough jibber-jabber..on the the recipe!

Makes enough for 1-4 people, depending on greediness (in my case it was one person and a few chips that my dad kidnapped while wandering through the kitchen..)

1 large bunch kale
1/2 tbs olive oil
1/2 tsp lemon juice
fine sea salt (regular salt works just fine:])

Preheat the oven to 300°F.

Throughly wash the kale and dry it well. Cut out the think center stalk, then cut (or rip..I’m partial to the ripping…extra amounts of fun :D) the kale into bite-sized pieces.

In a large bowl add the kale, olive oil, and lemon juice. Mix them together well being sure that the olive oil gets all over the kale (if you feel like you need more olive oil and a little bit more and then mix it all together again).

On a cookie sheet (or two), spread the leaves out in a single layer (as shown below).

Sprinkle the kale with salt and bake for 10-15 minutes. The time varies depending on how moist the kale is..but just watch it to turn nice and crispy but watch out so it doesn’t start to burn.

When your kale is nice and crunchy, remove it from the oven. You may want to add a bit more salt, or toss it with nutritional yeast….Whatever you do..these chips are simply divine! :]

Super Simple Avocado Egg Salad

If you are one of those people that enjoy Egg Salad sandwiches but are not enthused by the idea of it being weighed down with fatty mayonnaise, want a higher nutritious sandwich, or just simply love avocado..then this sandwich is perfect for you!

To make the Avocado Egg Salad, you will need…

  • 4 hard-boiled eggs
  • 1 large avocado, cut into little cubes
  • 1 teaspoon curry powder
  • Pinch of salt and pepper

Combine all the ingredients in a large bowl and mash them together with a fork. Adjust the salt/pepper/curry amount to your tastes. Slap between two pieces of bread of a wrap (I used a whole wheat wrap)..and enjoy!😀

This recipe is incredibly delicious. Even my mother, who doesn’t generally like curry, absolutely loved this wrap! We liked it so much we had it two days in a row!
