Super Simple Avocado Egg Salad


If you are one of those people that enjoy Egg Salad sandwiches but are not enthused by the idea of it being weighed down with fatty mayonnaise, want a higher nutritious sandwich, or just simply love avocado..then this sandwich is perfect for you!

To make the Avocado Egg Salad, you will need…

  • 4 hard-boiled eggs
  • 1 large avocado, cut into little cubes
  • 1 teaspoon curry powder
  • Pinch of salt and pepper

Combine all the ingredients in a large bowl and mash them together with a fork. Adjust the salt/pepper/curry amount to your tastes. Slap between two pieces of bread of a wrap (I used a whole wheat wrap)..and enjoy! 😀

This recipe is incredibly delicious. Even my mother, who doesn’t generally like curry, absolutely loved this wrap! We liked it so much we had it two days in a row!
